Low Fat Sweet and Sour Chicken Cups

Will need:

1 Gem lettuce, leaves separated

2 chicken breasts cut into strips

1 green bell pepper sliced

2 cloves of garlic, sliced

1 tablespoon roasted cashews

1 tablespoon of sesame seeds

1 1-inch piece of fresh ginger root

100 g of fresh pineapple in pieces

For the sauce:

1 tablespoon light, soft brown sugar

2 fluid ounces dry sherry

2 fluid ounces tomato sauce

2 fluid ounces of rice vinegar

2 fluid ounces of soy sauce

5 fluid ounces of chicken broth

1 red bell pepper chopped

1 tablespoon of cornmeal

2 fluid ounces of vegetable oil

Instructions to make:

Mix everything for the sauce, except the cornmeal, in a bowl.

Heat the oil in a wok and sauté the chicken for 4 minutes.

Add the other ingredients and fry for 1-2 minutes.

Add the sauce to the chicken and cook for 5 minutes

· Add the cornmeal and wait until the sauce thickens

Place the lettuce leaves on a plate and pour the mixture over the leaves.

Sprinkle with sesame seeds and serve
